Paleo Day 8 - She once was a true love of mine

This is, without a doubt, the best way I’ve ever found to make pork chops. I’ve made it a few times in the past, and the best part? It’s already 90% Paleo! All I had to do differently was replace the water/beef bouillon with the bone broth I made last week. Done! I also cut the butter and salt in half. I don’t have any sage, so I just use rosemary and thyme, thereby ensuring I’ll have Scarborough Fair stuck in my head whenever I eat pork chops.

As for the rest of the day, I had bacon n’ eggs for breakfast, and a cheesesteak-in-a-bowl for lunch (basically cheesesteak meat in a bowl with a little cheese and lots of hot sauce), as well as a few green peppers and some cauliflower. A little light on the veggie side of things, but I’ll pick back up tomorrow.

I hit up Giant today after work - it was a little bit crazy, as the weather reports keep telling us we’re getting snow/ice tomorrow and Lancaster tends to lose its collective mind at the suggestion of winter weather. Nevertheless, I was able to pick up a bunch of different steaks at really good prices, as well as a ton of different nuts to try. I also grabbed some celery and shallots, just to give them a try. My mentality so far is that I’m allowing myself to get whatever I want as long as it’s Paleo and I at least try it. I’m really excited for the ground bison I picked up - I’m going to make bison burgers for dinner tomorrow!

In other news, nearly all the food I brought into work has been snatched up by various coworkers. There were a few things left that I’ll probably just toss in the trash come Monday morning, but I rescued the Ovaltine and the Panko bread crumbs. I figured I can use them on cheat days once I start working those in - but for the time being they’re being kept safely locked away in my work locker at the hospital.

I can’t believe it’s been over a week now. I’ve tried so many different things. Some have worked, some not so much. I discovered I wasn’t getting near enough calories, hence my extreme lethargic-ness for a day or two that nearly had me scared into quitting, but I’ve overcome that hurdle for the time being. And the more I work at the hospital, and the more I see people not that much older than me coming in for pre-diabetes bloodwork, or blood-thinner medication checks, or extreme obesity, the more it makes me want to stick with this program, to see it through, to change my life, and to escape from the prison of poor health and disease that to 90% of the population seems utterly unavoidable.
