Paleo Day 6 - Zzzzz….
I lied, today’s actual new favorite thing ever is SPAGHETTI SQUASH. Seriously, where has this stuff been all my life? So yummy, and so easy to make! Honestly, the hardest part about my whole dinner tonight was just cutting the damn thing in half. But once I did that, I just threw it on a pan with some water and into the oven it went! Half an hour later and it’s breaking into awesome little spaghetti strands. I’m probably going to go through about one of these a week. While it was baking, I threw some ground beef in a skillet, browned it, added some tomato paste, water, onions and a ton of spices to make anĀ impromptuĀ meat sauce. It came out really good! I was worried because every recipe I found online used a bunch of different things like stewed tomatoes, tomato juice, whole tomatoes, chopped tomatoes, celery, etc… and I didn’t have any of that. But I love the way my sauce came out - super meaty with just enough tomato flavor to hold it together.
So right around lunch time today, I started getting really tired and lethargic. I’ve read a bunch of places that that can happen when you’re first starting out on Paleo. I was really foggy the rest of the afternoon at work, and I’m thinking I’m not getting enough calories yet. So I heaped up my “pasta” plate tonight and I’m going to have something else before I go to bed as well. Which will be rather early, since I have to go in at 6:00am tomorrow :(
But in the meantime I’m watching old episodes of Top Gear because it always makes me happy, and the new season starts January 29th!!
