Paleo Day 3 - Dem bones, dem bones
I have successfully created bone marrow stock! I let it go for about 20 hours in my crock-pot on low, using the one bone I got from the grass-fed meats booth at Central Market, as well as some organic garlic and the ends to the sweet potato I ate yesterday (because, why not?). I haven’t tasted it yet (I’m not brave enough at this point to just drink it straight…) but it smells good! I’ve got what I need for the Hungarian Beef Goulash set aside in the fridge, and the rest I put into half-pint mason jars and put them in the freezer. All told I ended up with about 5.5 cups of stock.
For breakfast I cooked up some of the bacon I got, but I let it go waaaay too long, and it came out far too crispy :( Oh well, it still tasted good! I drained off the fat into another mason jar so I can start saving up to make BACONNAISE. Amazing. It’s gonna take a while to get a whole 8oz together, but that just means I’ll have to eat more bacon. Oh darn :)
Lunch today is going to be me finally tackling a salad. I am still wary of them, but I know they’re something I’m going to have to learn to like. I got organic baby spinach and cherry tomatos, and I’ve got some sliced turkey breast as well, so I’m going to look around for some paleo dressing ideas this morning.
