Paleo Day 2 - Beef! It’s what’s for dinner.
I don’t really know what I made for dinner tonight, but it’s tasty…
I had some ground beef and I wasn’t sure what to do with it, so I just started browning it and I figured it would come to me as it cooked. It’s not grass-fed beef (I only just switched, I still have some other stuff left over…) so I drained most of the fat off after it was done browning. I found a can of tomato paste in what little I have in my cupboard and dumped that in with some frozen collared greens. The paste made it too paste-y so I added two tablespoons of butter. It was waaaay too tomato tasting so I added a bunch of spices - roasted cumin, chili powder, garlic powder, sea salt. Still too tomato tasting, so I added more of those spices, along with cayenne pepper and a cajun blend I had. After a few more rounds of adding things in, the overwhelming tomato taste was gone. If I had to liken it to something, I guess it would be sloppy joes or chili without the beans. I don’t have anything to put it on, so I’m just eating it like chili, with a spoon (and a little cheese on top. I know, bad, but it’s only a very little bit.)
I know I’m posting a lot about this, but I’ve found it really helps to keep me accountable. Already, I’ve fought off cravings for sugar and root beer and pudding and chocolate by thinking to myself “but if I eat that I’ll have to put it on Tumblr/Facebook for all to see!”
