Paleo Day One - Gotta get down on Fry-day
I appologize for that. I really am truly sorry for that pun.
Anyway, first Paleo dinner = success! Kinda! It tasted good, but I definitely have to work on seasoning. Basically I stir-fried chicken in olive oil and seasoned with ground ginger and cumen. I think next time I should marinate the chicken somehow, as it was a bit bland. Also, more salt/pepper at this stage. Then I took the chicken out and added all the frozen veggies I had on hand - broccoli, cauliflower and colared greens. Cooked them for a good long time in more olive oil (and I remembered the salt and pepper at this stage!). Then I added the chicken back in to get it back up to temperature. Cooked a few more minutes, dumped it onto a plate and voila!
Verdict: Yum! I really like broccoli! I need fresher cauliflower tho :/ and I didn’t really taste the collared greens, which I suppose is a good thing? They didn’t taste bad, they were just kinda… there. As a caveat, this was the first time I’ve ever eaten collared greens so I don’t know if maybe that’s just how they’re supposed to taste… Overall, I’m really excited with how this turned out. And I even have leftovers for lunch tomorrow!
In other news, I got a call from the nutritionist’s office looking to set up a time to meet. Unfortunately, it looks like her office hours are exactly when I’m working all next week. The guy who called said he’d talk to her though, and see if we could work something out. So we’ll see!
So tomorrow the plan is to head over to Lancaster Central Market to see what there is to see. I’m going to see if I can pick up some broccoli, peppers, and at least one veggie I’ve never tried before (time to start expanding my tastebuds!). I’m also going to try to pick up some beef to cut up for a beef stir-fry. I have a feeling I’ll be eating a lot of those. And I’m going to see if the butchers there sell bones to turn into bone stock (which makes me feel all fancy and grown-up.)
